Also called “Natural Tuo,” Cha Tou forms as a by-product of the fermentation process (Wo Dui) in ripe Puerh tea production. During wet piling fermentation, tea masters heap broad-shaped leaves together in a large pile and then moisten the pile to encourage fermentation.
The piles are often several feet high. As a result, the heat and weight place the leaves at the bottom under a lot of pressure. The leaves gradually release natural pectins, and this basically acts as a glue. The leaves at the bottom form into a dense, resinous structure, and after fermentation, tea masters then remove and grade the clumps.
These dense tea lumps boast a tight, knotted appearance. They are aged to soften the bitter flavors present in young tea, and over time, they develop a uniquely rich flavor profile. Lao Cha Tou Puerh Tea is also very resilient. You can brew the clumps over 15 times and still enjoy those rich and complex flavors and aromas.
