Puerh is a fermented tea that often ages for years and even decades. Tea masters compress the processed leaves into tightly packed formats like tea bricks and cakes, and then place them in dry storage. Microbes in the tea then begin to digest its bitter compounds, transforming them into softer and more palatable flavors.
Basically, the tea matures, and the longer it ages, the more complex those flavors become.
Our 2011 Aged Raw Puerh Tea Cake has been aging for over 15 years at this point. It puts the cake in a sweet spot that means it has lost many of its bitter flavors, but remains an affordable choice for tea enthusiasts.
