Description
Also known as Snowflake Dancong, Snow Covered Oolong is a premium Taiwanese. Farmers harvest the tea during the autumn/winter, as the colder temperatures produce thicker and larger leaves. These leaves possess many of the creamy and floral flavors common in Taiwanese Oolong. However, the later harvest imparts a distinctive brightness and a stronger minerality.
There’s also a notable sweetness, which comes from the slower growth. Typically, when tea shrubs grow quickly, they produce bitter compounds such as tannins. But when you slow down that growth and give the plants more time and freedom, they focus more on producing compounds like amino acids. These are sweeter and give the tea leaves a more delicate flavor.
The colder weather, combined with the generally harsh conditions in which these tea plants grow, means yields are often very small. As a result, it’s a rare tea with extremely limited quantities.
