Tea masters use traditional and labor-intensive processes to craft a black tea that’s both refreshing and sweet.
Firstly, pickers select delicate top buds and leaves from the plant. They then spread the leaves on large bamboo mats to naturally wither them. The moisture levels drop, and the leaves become soft and malleable, ready for the next step.
Tea masters then get to work rolling the leaves, breaking the outer cell walls to release natural oils and enzymes, hastening the oxidation process, which is the next step.
The leaves interact with oxygen, and this is where they develop many of their complex flavors. They also transform astringent flavors into more complex, rounded, and sweeter notes. After the tea reaches peak oxidation, tea masters halt the process and then prepare the tea for packaging and shipping.
Needless to say, Sun Moon Lake Black Tea is a labor-intensive tea. As a result, quantities are limited. It’s one of the most popular black tea regions in Taiwan. However, Taiwan is best known for its oolong production, and black tea constitutes a small percentage of its total output, with Sun Moon Lake Black Tea composing a fraction of that amount.
