White tea is the name given to young tea buds that are harvested and minimally processed. They are typically not allowed to open and are then dried in the sun. This produces a tea that looks and tastes unlike green, oolong, black, or fermented tea.

If fermented tea (pu’er, also known as “dark tea”) is the end of the tea production process, then whites are the start. It isn’t heavily oxidized like black tea. It isn’t fermented like dark tea. Very little is done to the buds, and this creates the freshest, cleanest variety of tea that you can buy.

It has been described as everything from “creamy” to “sweet.” But as with all types of tea, the flavors can vary depending on the variety.

The best white tea varieties undergo a strict production process. The plants are grown until the buds appear. The best buds are then selected, with harvesters focusing on ones that display a lot of fine hairs.

Types of White Tea

  • White Peony (Bai Mu Dan): Harvested as two leaves and a silver bud. A premium white tea with a full mouthfeel and a fresh, nutty flavor.
  • Silver Needle (Yin Zhen Bai Hao): Uniform shape with needle-like tips and a sweet aroma.
  • Noble, Long Life Eyebrow (Shou Mei): Although premium, this tea is considered lower quality than silver needle and white peony and is made of the leaves deemed unsuitable for the above.
  • Tribute Eyebrow (Gongmei): Made from young buds and leaves, with a darker and bolder flavor.
  • Fujian New Craft (DaBaiCha): Produced in Fujian Province by withering, drying, and rolling, giving the leaves more of a black tea appearance.

White tea is comparable to green tea with regard to its EGCG content (a type of polyphenol known as a catechin), and this is higher in teas that haven’t been aged.
