Description
Jin Ta Black Tea is a unique wild harvest black tea from Yunnan, China. It is sun-dried and produces a raw, yet sweet aroma that is unlike most black teas.
Unlike plantation tea shrubs, wild tea trees develop complex root systems and can grow up to 60-feet tall. These trees draw more minerals from the soil and impart those mineral flavors into the tea. Older teas also produce a smoother-tasting tea soup, with less of the bitter flavors found in other black tea varieties.
After harvesting the leaves, tea masters dry them on bamboo mats. In addition to removing excess moisture from the leaves, it also starts oxidation. Tea masters continue this process by rolling and massaging the leaves, which bruises them and expands the surface area to allow more oxygen inside.
They then dry the leaves and halt oxidation. The production process creates a balanced, sweet, and fruity tea soup.
