The production process begins when farmers harvest a large-leaf varietal of tea in forested, mountainous regions within China’s Yunnan Province. The farmers then process the tea into Maocha before kick-starting fermentation.

The fermentation process introduces beneficial bacteria that transform the bitter flavors. They give the tea its distinctive mellow profile, with notes of sweet red dates, as well as earthy undertones. The more it ages, the more those flavors develop.

To brew our Aged Zaoxiang Puerh Tea, first weigh out between 3 and 5 grams, and add the leaves to a teapot. Pour over boiling water to wake up the leaves, and then discard the water. You can now steep the tea, ideally for between 20 and 30 seconds. After drinking, steep the tea again, adding 5 to 10 seconds to the brewing time.

You can brew the same leaves multiple times, provided you keep increasing the brewing time to extract more of those sweet, mellow, and earthy flavors.
