Black tea undergoes a complex production process that includes withering, rolling, oxidizing, and drying. It’s a process that brings out strong and complex flavors. It’s woodier, maltier, and bolder than green and white tea. Depending on the variety, there may also be flavors of honey, plums, spice, and smoke.

Black tea contains a high concentration of polyphenols like theaflavins, which form during the oxidation process. These compounds are thought to possess strong antioxidant properties and also enhance the tea’s flavor and color.
